About

Schwai's Meat & Sausage, a family-owned market, has been perfecting the art of old-world sausage making for generations. Their dedication to traditional techniques results in unique, large, and flavorful smoked products that stand out from typical grocery store offerings. From their renowned brats and Polish sausage to kielbasa and summer sausage, each item boasts a distinct woodsy, smoked flavor. Customers often make special trips to stock their freezers, praising the quality and taste that keeps them returning. While not a flashy store, the focus here is entirely on the meats, with much of the building dedicated to processing and smoking. This commitment ensures an authentic taste that many butchers cannot replicate.

We live out of state, but visit 1-2x per year for family. We always plan a small chunk of change to spend here to stock our freezer in Missouri for the year. Schwai’s brats are a treat and we would recommend to anyone!

5 stars! I know my brats...my fresh polish and my smoked sausage sticks....this place is the real deal! Their stuff has a great woodsy smoked flavor....their fresh polish sausage is top notch....great flavor and no hard spongy fatty pieces! Their sausage sticks are to die for....if you like a great smoked flavor you MUST try this place....you'll go back again and again!

Schwai’s is a great meat market for old world sausage making! I have known of Schwai’s for more than 45 years (when I was just a kid). From their days out near Slinger to their time in Cedarburg. This has been a family owned and operated business since its founding. Old man Schwai used to cook the wild game dinners at the Grafton Hotel where I was a dishwasher. He had an infectious sense of humor that his son (and now owner) inherited. We have not lived in Wisconsin for over 30 years. But whenever we come back to the state or have people from Wisconsin visit us, we get Schwais’s brats and sausages to bring home. If you want old world sausage making at its best with unique blends not found in the grocery store (kielbasa / ring bologna / blood sausage / potato sausages / hot sticks / summer sausage etc) - you must go to Schwai’s. This is the real deal. Many butchers are good at making sausage. Schwai’s is exceptional at it — and has a genuine old world technique and smoke to their sausages that others simply cannot replicate. Much of the building is dedicated to sausage making and meat processing / smoking. This is not a flashy or trendy store like so many try to be. It’s old world and all about the meats they produce. The sausages are large. One is nearly capable of filling 2 buns. So be aware of that. Ie. 6 brats is nearly equivalent to 10 normal size sausages. Schwai’s is an out of the way place but worth the drive. You will smile when eating their meats!

The brats were the BEST I'd ever eaten! They are huge, too. We grilled ours and they were very juicy. This was our first experience with Schwai's Pork Brats....and now we are planning a road trip, to get more, for the freezer. We are not fans of store-bought brats and we normally purchase ours from a meat market in Rockford, IL. They really are the best I've eaten. My husband agreed.
